  • 2 c. sugar
  • 1 1/2 c. vegetable oil
  • 4 eggs
  • 2 c. flour
  • 2 tsp. each: baking powder, baking soda and cinnamon
  • 1 tsp. salt
  • 3 c. grated, raw carrots

Directions

    Beat together the sugar, oil, eggs and carrots.

    Sift dry ingredients together; add to first mixture.

    Blend thoroughly. Pour into greased 13 x 9 x 2-inch pan or a Bundt pan.

    Bake at 300° for 55 minutes, then bake at 325° for 10 minutes more.
