- 1/2 c. milk
- 1/2 c. flour
- 1 tsp. melted shortening
- 1/2 tsp. salt
- 1 egg yolk
- onions (rings)
- bell peppers (rings)
- yellow or zucchini squash, sliced
- fresh mushrooms
- eggplant, cubed
- green tomatoes, wedged
Directions

1Prepare vegetables; place in large bowl of ice water until cold.

2Remove and let dry on paper towels.

3Mix batter ingredients and dip assorted vegetables in batter.

4Place in deep fryer and fry at 360° until brown.

5Drain and salt lightly.

6Serve as vegetable side dish or as an appetizer with Ranch type dressing as a dip.
