Fried Vegetable Rings

  • 1/2 c. milk
  • 1/2 c. flour
  • 1 tsp. melted shortening
  • 1/2 tsp. salt
  • 1 egg yolk
  • onions (rings)
  • bell peppers (rings)
  • yellow or zucchini squash, sliced
  • fresh mushrooms
  • eggplant, cubed
  • green tomatoes, wedged

Directions

    Prepare vegetables; place in large bowl of ice water until cold.

    Remove and let dry on paper towels.

    Mix batter ingredients and dip assorted vegetables in batter.

    Place in deep fryer and fry at 360° until brown.

    Drain and salt lightly.

    Serve as vegetable side dish or as an appetizer with Ranch type dressing as a dip.
