- 1 lb. pinto beans
- 1/2 lb. salt pork
- 1/2 c. chopped onion
- 1 clove garlic
- 6 Tbsp. olive oil
- 1 (16 oz.) can tomatoes
- 2 (10 3/4 oz.) cans chicken broth
- salt and pepper to taste
- Muenster cheese
- sour cream
Directions

1Cook beans with salt pork until tender.

2Drain beans; reserve water.

3Puree 1/2 the beans in blender, adding reserved water as needed.

4Saute onion and garlic in olive oil.

5Add tomatoes and cook 10 minutes.

6Add reserved beans and pureed and broth; simmer 20 minutes.

7Add reserved water if need soupier.

8Place a slice of cheese in bowl.
-
9Pour soup and top with sour cream.
