Frijole Soup

Ingredients

  • 1 lb. pinto beans
  • 1/2 lb. salt pork
  • 1/2 c. chopped onion
  • 1 clove garlic
  • 6 Tbsp. olive oil
  • 1 (16 oz.) can tomatoes
  • 2 (10 3/4 oz.) cans chicken broth
  • salt and pepper to taste
  • Muenster cheese
  • sour cream

Directions

    Cook beans with salt pork until tender.

    Drain beans; reserve water.

    Puree 1/2 the beans in blender, adding reserved water as needed.

    Saute onion and garlic in olive oil.

    Add tomatoes and cook 10 minutes.

    Add reserved beans and pureed and broth; simmer 20 minutes.

    Add reserved water if need soupier.

    Place a slice of cheese in bowl.

    Pour soup and top with sour cream.
