  • 4 Tbsp. oil
  • 1 tsp. garlic powder
  • 1 zucchini, sliced
  • 2 carrots, sliced
  • 1/2 onion, diced
  • 3 red potatoes, chopped into small cubes
  • 8 eggs
  • 3 Tbsp. whipping cream or water

Directions

    In a 10-inch skillet, saute over medium heat all ingredients but eggs and cream until tender (about 8 minutes). Remove from heat. Beat eggs and cream in a bowl.

    Put skillet back on heat. Pour egg mixture over vegetables. Do not stir. Cook until eggs are softly set.

    Cover the mixture until the top sets. Salt and pepper to taste.

    Can add Parmesan cheese for added touch. Can also add imitation crab meat for special touch.
