- 38 cup water
- 1 envelope unflavored gelatin
- 3/4 cup granulated sugar
- 3/4 cup confectioners' sugar
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
Directions

1In a 2-quart saucepan, combine gelatin with the water.

2Let stand 5 minutes.

3Stir in granulated sugar.

4Place over medium heat,and bring to a boil.

5Reduce heat, and simmer for 10 minutes.

6Stir in confectioners' sugar, and beat with a whisk until foamy.

7Whisk in baking powder and vanilla.

8Transfer to the large bowl of an electric mixer, and beat at high speed until thick and cool, about 10 minutes.

9The frosting is bright white, but it can be tinted in small batches with food coloring.

10Use the icing as soon as it is made.

11For frosting cookies, spread with a metal spatula; for decorating, use in a pastry bag.

12Spread out the cookies in one layer to dry completely, about 40 minutes.
