Frozen Apple Salad

Ingredients

  • 1 can crushed pineapple (8 1/2 oz.)
  • 2 eggs, beaten
  • 1/2 c. sugar
  • 1/8 tsp. salt
  • 3 Tbsp. lemon juice
  • 2 c. unpeeled, chopped apples
  • 1/2 c. chopped celery
  • 1 c. whipped cream or Cool Whip

Directions

    Drain pineapple, saving juice.

    Add water to juice to make 1/2 cup of liquid.

    Stir liquid into eggs.

    Add sugar, salt and lemon juice.

    Cook on top of stove, stirring until mixture thickens (about 5 minutes over medium heat).

    Cool.

    Fold drained pineapple, apples, celery and whipped cream into cooled dressing.

    Spoon into 9-inch dish.

    Cover and freeze.
