- 6 lb. zucchini, cut in thin slices
- 2 green peppers, diced
- 3 large onions, diced
- 3 cloves garlic, minced
- 1 c. parsley
- basil and tarragon to taste
- salt and pepper to taste
Directions

1Melt 6 tablespoons butter. Add onions and cook 10 minutes. Add 1/4 cup water, then zucchini, bell peppers, garlic, salt and pepper. Cover and cook 3 minutes. Stir mixture and cook until soft. Add parsley, basil and tarragon. Cool.

2Blend and put in 1 pint freezer containers and freeze.
