Ingredients

  • 4 c. all-purpose flour
  • 1/2 tsp. double acting baking powder
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 1/2 lb. whole pecans
  • 3/4 lb. (1 3/4 c.) chopped, candied pineapple
  • 3/4 lb. (1 3/4 c.) whole candied cherries
  • 1 lb. (3 1/2 c.) golden raisins
  • 1 c. butter
  • 2 c. sugar
  • 6 unbeaten eggs
  • 3 Tbsp. (1 oz. bottle) brandy flavoring

Directions

    Sift together the first 5 ingredients into a large 4-quart mixing bowl.

    Add pecans, pineapple, cherries and raisins.

    Mix until all fruit and nuts are well coated with dry ingredients. Set aside.
