- 1/4 c. quick cooking tapioca
- 3 c. water
- 1/4 c. sugar
- dash of salt
- 2 cans (6 oz.) frozen orange juice concentrate
- 3 c. or more fresh fruit (peaches, bananas, strawberries, blueberries, apples, oranges, etc.)
Directions

1Combine tapioca and water and let stand 5 minutes.

2Cook and stir over medium heat until it comes to a boil.

3Remove from heat and blend in sugar, salt and juice concentrate.

4Cool, stirring occasionally.

5Cover and chill.

6Before serving, fold in fruits: fresh fruits or frozen fruits work best.
