- 2 cups long grain rice brown
- 4 cups water
- 1 teaspoon sea salt
- 2 each onions chopped
- 1 teaspoon sea salt
- 4 tablespoons safflower oil
- 1 each zucchini sliced
- 1 cup eggplant cubed
- 3 each apples cored, sliced
- 2 each peaches peeled, sliced
- 1/2 cup raisins, seedless
- 1/2 cup apple juice
- 2 tablespoons curry powder
- 2 tablespoons red wine vinegar
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1/4 cup peanuts chopped
- 2 each bananas diagonally
Directions

1Combine rice, water and 1 teaspoon salt and steam 1 hour.

2Saute onions with 1 teaspoon salt in oil until onions are tender.

3Add zucchini and eggplant and fry until tender.

4Lightly stir in fruits and apple juice, then add next 4 ingredients.

5Simmer 10 minutes.

6Place steamed rice into a buttered 3-quart baking dish.

7Smother with sauteed mixture.

8Cover and bake at 350F (180C).

9for 25 minutes.

10Remove and garnish with peanuts and bananas.

11Serve immediately.
