  • 2 1/2 c. vanilla wafers (crumbled)
  • 2 sticks butter
  • 7 oz. coconut
  • 1 jar maraschino cherries
  • 1 can Mandarin oranges
  • 1 can pineapples (tidbits or chunks)
  • 1 can peaches (diced)
  • 1 can Eagle Brand milk (chilled)
  • 3 Tbsp. lemon juice
  • 12 oz. Cool Whip
  • walnuts

Directions

    Drain fruit and set aside.

    Melt butter in iron skillet.

    Pour in coconut and brown, add vanilla wafer crumbs.

    Remove from heat. Put aside 1/2 cup of mixtrue.

    Press immediately in 2 pie plates. Beat milk and lemon juice until peaked, add cool whip.

    Gently fold in fruit and walnuts.

    Top with crust mixture.

    Refrigerate overnight.
