Ingredients
- 1 12 cups quinoa, dry
- 12 cup scallion, chopped
- 13 cup dried cranberries
- 13 cup raisins
- 13 cup dried apricot, chopped
- 13 cup pecans, chopped
- 1 (14 ounce) can crushed pineapple, unsweetened
- 1 tablespoon lemon juice
- 1 tablespoon lime juice
- 2 tablespoons fresh basil, finely chopped
- 1 teaspoon sea salt
- 12 teaspoon lemon zest
- 12 teaspoon orange zest
- 2 12 cups water
Directions

1In a saucepan, combine water with quinoa and sea salt.

2Bring to a boil.

3Reduce heat, cover and simmer 10-15 minutes until liquid is absorbed.

4Remove from heat, cool to near room temperature.

5In a large bowl, mix quinoa with all other ingredients.

6Do not drain the pineapple--the juice is an essential ingredient!

7Cover and chill in refrigerator overnight.

8Serve cold.
