Fruit & Quinoa Salad

Ingredients

  • 1 12 cups quinoa, dry
  • 12 cup scallion, chopped
  • 13 cup dried cranberries
  • 13 cup raisins
  • 13 cup dried apricot, chopped
  • 13 cup pecans, chopped
  • 1 (14 ounce) can crushed pineapple, unsweetened
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice
  • 2 tablespoons fresh basil, finely chopped
  • 1 teaspoon sea salt
  • 12 teaspoon lemon zest
  • 12 teaspoon orange zest
  • 2 12 cups water

Directions

    In a saucepan, combine water with quinoa and sea salt.

    Bring to a boil.

    Reduce heat, cover and simmer 10-15 minutes until liquid is absorbed.

    Remove from heat, cool to near room temperature.

    In a large bowl, mix quinoa with all other ingredients.

    Do not drain the pineapple--the juice is an essential ingredient!

    Cover and chill in refrigerator overnight.

    Serve cold.
