- 3 Tbsp. salad oil
- 8 chicken thighs, skinned
- 3 green peppers, cut in rings
- 1 medium onion, cut in rings
- 1/4 c. vinegar
- 2 Tbsp. soy sauce
- 2 Tbsp. brown sugar
- 1 Tbsp. cornstarch
- 1 (16 oz.) can peach halves
Directions

1Brown chicken in oil.

2Remove from pan.

3Saute onion and peppers until tender-crisp.

4Drain peach liquid into skillet with vegetables.

5Add vinegar, sugar and soy sauce.

6Return chicken to skillet.

7Simmer 1 hour.

8Mix cornstarch with water.

9Add to chicken and vegetables.

10Cook until thickened.

11Add peach halves. Heat through.
