Ingredients

  • 1/2 c. pitted prunes
  • 1/2 c. water
  • 1 Tbsp. butter
  • 1 tbsp. oil
  • 3 lb. chicken (pieces)
  • 2 c. chopped onion
  • 1 large clove garlic
  • 1 can (1 lb.) tomatoes
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/2 tsp. nutmeg

    Chop prunes and soak in water for 1 hour. In large skillet, heat butter & oil; add chicken and brown 5-10 minutes on all sides. Arrange chicken in shallow baking dish. Add onions to skillet and saute' 5 minutes. Stir in garlic, tomatoes, salt & pepper, and nutmeg. Simmer 5 minutes. Pour over chicken and bake at 375° for 30 minutes.

    Pour prune mixture over chicken and bake until chicken is tender. Serves six.
