Ingredients
- 1 (11 oz.) can mandarin oranges in light syrup (undrained)
- 1/4 tsp. unflavored gelatin
- 1 tsp. lemon juice, divided
- 1 tsp. poppy seed
- 1/2 lb. fresh spinach, washed, trimmed and torn
- 1 1/2 c. chopped red apple
- 1/2 c. thinly sliced celery
- 1/3 c. raisins
- 2 Tbsp. unsalted sunflower kernels
Directions

1Drain oranges, reserving 1/2 cup liquid.

2Set oranges aside. Combine 1/2 cup liquid and gelatin in a small, nonaluminum saucepan; let stand 1 minute.

3Place over medium heat; cook 2 minutes or until gelatin dissolves, stirring constantly.

4Remove from heat; stir in 1/2 teaspoon lemon juice and poppy seed.

5Pour into a glass or stainless steel bowl.

6Cover; chill 3 hours. Combine oranges, remaining 1/2 teaspoon lemon juice, spinach and next 3 ingredients in a bowl; toss gently.

7Arrange spinach mixture on 6 individual salad plates.

8Drizzle dressing evenly over salads and sprinkle with sunflower kernels.
