Ingredients
- 3 c. all-purpose flour
- 1 pkg. active dry yeast
- 2 tsp. salt
- 1 1/4 c. warm water (110~ to 115~)
- 1/4 c. light molasses
- 1 c. wheat germ
- 1 c. carrots, finely shredded
- 1/4 c. parsley, snipped
- 1 egg
Directions

1In a large mixing bowl combine 2 cups of flour, yeast and salt.

2Add water, molasses, oil and egg.

3Beat at low speed on electric mixer for 1/2 minute.

4Scrape sides of bowl constantly. Beat for 3 minutes at high speed.

5By hand stir in the remaining flour, wheat germ, carrot and parsley.

6Turn batter into a greased 2-quart casserole dish.

7Cover; let rise in a warm place until the bread has nearly doubled in size (45 to 60 minutes).

8Bake at 350° for 50 to 60 minutes.

9Cover loosely with foil after the first 20 minutes of baking.

10Remove from casserole dish as soon as done. Brush top crust with melted butter or margarine if desired. Cool.

11Makes 1 loaf.
