- 12 red potatoes
- 1/2 c. skim milk
- 1 green pepper, diced
- 1 red pepper, diced
- 1 onion, diced
- 1 to 2 Tbsp. parsley, minced
- 8 to 12 slices Canadian bacon, cooked and diced
- 3/4 c. low-fat Cheddar cheese, grated
- 1/3 c. low-fat margarine, melted
- salt and pepper
Directions

1Preheat oven to 400°.

2Boil potatoes with skins for about 20 to 25 minutes or until tender.

3Drain and cool.

4Dice potatoes with skins into bite size pieces.

5Spoon potatoes into 9 x 13-inch casserole.

6Moisten potatoes.

7Combine peppers, onion, parsley, Canadian bacon and cheese.

8Spread pepper mixture over top of potatoes.

9Drizzle with margarine.

10Season with salt and pepper. Bake, uncovered, at 400° for 30 to 35 minutes.

11Low-fat recipe. Yields 6 to 8 servings.
