- 4 Russet potatoes
- 2 tbsp butter
- 1 onion, chopped
- 10 oz pkg frozen broccoli
- 1/2 c ranch salad dressing
- 1 tbsp vegetable oil
- 2 tsp dried parsley
Directions

1Preheat oven to 425°. Pierce potatoes.

2Place in microwave for 12-15 minutes.

3Slice off the top of potato.

4Scoop out pulp. Heat small skillet, adding onion, drained broccoli, salad dressing and pulp.

5Mix well.

6Brush potato skin with oil.

7Spoon mixture into shell and place on baking sheet.

8Bake for 15 minutes. Sprinkle with salt and pepper to taste.
