Garlic & Mozzarella Bread

Ingredients
- 1 roll or demi-load, 6-8 inches long
- 2 slices cheese mozarella, 1/4 inch-thick and cut into quarters
- 1/2 cup garlic butter
- 5 cloves garlic
- 2 shallots
- 5 sprigs parsley stemmed
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 sticks unsalted butter softened
Directions

1Preheat oven to 350 degrees

2Mince garlic, shallots, and parsley in a food processor. Then whip in salt, pepper, and butter until mixture is soft.

3Cut the bread into 1/2-inch slices, being careful not to cut all the way through the loaf

4Put a piece of cheese in each slit. Spread the garlic butter over the top of the bread

5Put bread on a baking sheet and bake for 15 minutes, or until the cheese is melted and the bread is browned on top
