Ingredients

  • 1/4 cups Chopped Garlic Scapes, Or More To Taste
  • 1 whole Lemon, Juiced
  • 1/2 teaspoons Salt, Plus More To Taste
  • 2 cups Cooked Chickpeas, Drained (See Note)
  • 13 cups Tahini (optional)
  • 1/2 cups Extra Virgin Olive Oil
  • 2 teaspoons Fresh Chopped Herbs And/or Spices, For Topping

Directions

    In a food processor, pulse garlic scapes, lemon juice and salt.

    Add chickpeas, tahini (optional) and blend until smooth, adding olive oil slowly as you go.

    Top with herbs and spices such as dill and sumac or maybe some smoked paprika.

    Note: You can reserve some of the chickpea liquid for thinning the mixture if needed.
