- 3/4 pounds Shelled, Deveined Small To Medium Shrimp
- Kosher Or Sea Salt
- 5 Tablespoons Olive Oil
- 3 Tablespoons Minced Garlic
- 2 Tablespoons Minced Fresh Parsley
- 2 Tablespoons Good, Medium-dry Sherry Or White Whine
Directions

1Sprinkle the shrimp with the salt and let sit for 10 minutes.

2In an earthenware casserole (I use a cazuela I bought in Spain) or other shallow casserole, heat the oil with the garlic and parsley until the garlic begins to sizzle.

3Add the shrimp and stir until opaque.

4Add the sherry and salt to taste, and cook over medium heat for a minute or two until the sherry evaporates and the sauce thickens slightly.

5Serve immediately in the casserole accompanied by a crusty loaf of bread to soak up the sauce.
