Ingredients

  • 1 lb. ground gator meat
  • 1 pkg. dry vegetable soup/dip mix
  • 3 c. complete pancake mix
  • 3/4 c. cornmeal
  • 1 large egg
  • 8 oz. shredded Monterey Jack cheese
  • 1 1/4 c. water
  • 1 Tbsp. margarine
  • 1 tsp. pepper

Directions

    Mix together the dry ingredients; add water, egg and cheese. Saute the ground gator in 1 tablespoon of margarine until the meat just turns white.

    Drain and then add to mixture.

    Stir by hand until all ingredients are distributed evenly.

    Drop 1/2 teaspoon of mix into 375° oil and deep-fry until golden brown, turning once.

    Drain on paper towels.

    Serve with prepared honey-mustard dressing.

    Makes approximately 250 (1 1/2-inch), in diameter.

    Can substitute crab or fish.
