Ingredients

  • 3 c. coarsely chopped, cored and peeled tomatoes
  • 1 1/2 c. peeled and coarsely chopped cucumbers
  • 1 green pepper, cored, seeded and coarsely chopped
  • 1 clove garlic, sliced
  • 1/2 c. water
  • 5 Tbsp. olive oil
  • 1/4 c. wine vinegar
  • 2 slices untrimmed fresh bread, cubed
  • 1/8 tsp. cayenne
  • salt to taste

Directions

    Puree all ingredients in blender. Chill.

    Serve in well chilled soup bowls.

    Pass as a garnish croutons, finely diced cucumbers, onion and green pepper.
