- 1 lb. Ricotta cheese
- 1 lb. sour cream
- 1 lb. cream cheese
- 1 1/2 c. sugar
- 4 oz. (1 stick) butter, melted
- 3 jumbo eggs
- 3 Tbsp. flour
- 3 Tbsp. cornstarch
- 4 1/2 tsp. vanilla
- 4 1/2 tsp. fresh lemon juice
Directions

1Place ingredients in order given in large mixing bowl.

2Beat with mixer, start on low, move to medium and finish 10 minutes on high.

3Batter should be smooth and liquid.

4Grease and flour a round 10-inch baking pan 3-inches high; pour into pan and bake 1 hour in preheated 350° oven.

5Leave cake in oven with door closed for 1 additional hour after heat is off.

6Cool on rack in refrigerator.

7Makes 20 servings.
