  • 1 lb. Ricotta cheese
  • 1 lb. sour cream
  • 1 lb. cream cheese
  • 1 1/2 c. sugar
  • 4 oz. (1 stick) butter, melted
  • 3 jumbo eggs
  • 3 Tbsp. flour
  • 3 Tbsp. cornstarch
  • 4 1/2 tsp. vanilla
  • 4 1/2 tsp. fresh lemon juice

Directions

    Place ingredients in order given in large mixing bowl.

    Beat with mixer, start on low, move to medium and finish 10 minutes on high.

    Batter should be smooth and liquid.

    Grease and flour a round 10-inch baking pan 3-inches high; pour into pan and bake 1 hour in preheated 350° oven.

    Leave cake in oven with door closed for 1 additional hour after heat is off.

    Cool on rack in refrigerator.
