  • 1 c. sugar
  • 1/4 c. lemon juice
  • 1 c. milk
  • 1/4 tsp. salt
  • 1 1/2 tsp. grated lemon rind
  • 2 eggs, separated

    Sift and measure flour.

    Sift together flour, sugar and salt. Add lemon.

    Beat egg yolks until light and lemon colored.

    Combine with milk.

    Stir slowly into dry ingredients.

    Fold in stiffly beaten egg whites.

    Pour into well buttered dish.

    Set in pan of water.

    Bake 35 to 40 minutes at 350°.
