- 4 strips bacon, cut up
- 2 large onions, chopped
- 1 large head red cabbage, finely shredded
- 1/3 c. red wine vinegar
- 1/3 c. Port wine or red currant jelly
- 1/4 c. firmly packed brown sugar
- 1 continuous strip orange peel (optional)
- 1/4 tsp. cloves
- 1 tsp. salt
- 1/4 tsp. black pepper
Directions

1Cook bacon in a large skillet until crispy. Remove bacon.

2In drippings, saute onion until soft. Add cabbage and toss.

3Add rest of ingredients.

4Reduce heat to low. Cover and cook until cabbage is glazed, about 1 1/2 hours.

5Stir occasionally.

6Put bacon in and stir.

7Makes 6 to 8 servings.
