German Red Cabbage

  • 4 strips bacon, cut up
  • 2 large onions, chopped
  • 1 large head red cabbage, finely shredded
  • 1/3 c. red wine vinegar
  • 1/3 c. Port wine or red currant jelly
  • 1/4 c. firmly packed brown sugar
  • 1 continuous strip orange peel (optional)
  • 1/4 tsp. cloves
  • 1 tsp. salt
  • 1/4 tsp. black pepper

Directions

    Cook bacon in a large skillet until crispy. Remove bacon.

    In drippings, saute onion until soft. Add cabbage and toss.

    Add rest of ingredients.

    Reduce heat to low. Cover and cook until cabbage is glazed, about 1 1/2 hours.

    Stir occasionally.

    Put bacon in and stir.

    Makes 6 to 8 servings.
