- 2 eggs
- 1/2 c. unsifted all-purpose flour
- 1/4 tsp. nutmeg
- 5 Tbsp. butter or margarine, cut into small pieces
- 2 Tbsp. confectioners sugar
- 2 Tbsp. lemon juice
Directions

1Preheat the oven to 425°.

2In a mixing bowl, beat the eggs lightly with a rotary beater, then beat in the flour, milk and nutmeg.

3Melt the butter over moderate heat in a heavy skillet with a heat-proof handle.

4When the butter is hot, immediately pour in all the batter.

5Bake for 15 to 20 minutes or until golden brown and puffed.

6Sift the sugar over the pancake and return to the oven for 1 or 2 minutes.

7Remove from the oven and sprinkle it with the lemon juice.

8Cut into wedges and serve with fruit syrup, preserves, honey or maple syrup.

9The pancake will puff while baking, but when taken from the oven it will fall (resembling a crepe).
