Ingredients

  • 4 ribs celery, diced fine
  • 1 qt. white vinegar
  • 2 qt. water
  • 1/2 c. honey
  • 1 Tbsp. fennel seed
  • 1 Tbsp. celery seed
  • 1/4 c. mustard seed
  • 1 lb. white onions, chopped
  • 2 red bell peppers, seeded and diced fine
  • 6 green bell peppers, seeded and diced fine
  • 6 hot Italian peppers, seeded and diced fine
  • 2 tsp. cracked black peppercorns
  • 1 tsp. flaked red pepper
  • 6 to 8 cloves garlic, mashed

Directions

    Place celery in large pot with vinegar, water, honey, fennel seed, celery seed and mustard seed.

    Bring to a boil, stirring until well blended.

    Add onions and continue boiling 5 minutes. Add peppers and peppercorns.

    Boil 5 minutes more.
