- 125 g butter
- 1 cup sugar
- 2 teaspoons golden syrup
- 1 egg, beaten
- 2 cups flour, sifted
- 2 teaspoons baking powder
- 1/2 teaspoon bicarbonate of soda
- 3 teaspoons ground ginger
Directions

1Melt the butter, sugar and golden syrup over a low heat.

2Remove from the heat and allow to cool slightly.

3Add beaten egg and dry ingredients.

4Mix well and leave in a cool place to harden.

5Roll into small balls and place on a greased baking tray (they will expand so place accordingly).

6Press down a little with the back of a fork.

7Bake for 10-15 minutes in a moderate oven, around 180c.
