Ginger Stir-Fried Courgettes

  • 1 teaspoon vegetable oil
  • 280 g courgettes, sliced
  • 12 red onion
  • 10 ml chopped gingerroot
  • 15 ml soy sauce
  • 5 ml dark sesame oil
  • salt and pepper

Directions

    In a non-stick frying pan, heat oil over medium-high heat; stir-fry courgette, onion and ginger for 1 minute.

    Add 1 tbsp water; cover and steam for 1 to 2 minutes or until tender-crisp, adding more water if necessary to prevent scorching.

    Stir in soy sauce and oil.

    Season with salt and pepper to taste.
