- 1 teaspoon vegetable oil
- 280 g courgettes, sliced
- 12 red onion
- 10 ml chopped gingerroot
- 15 ml soy sauce
- 5 ml dark sesame oil
- salt and pepper
Directions

1In a non-stick frying pan, heat oil over medium-high heat; stir-fry courgette, onion and ginger for 1 minute.

2Add 1 tbsp water; cover and steam for 1 to 2 minutes or until tender-crisp, adding more water if necessary to prevent scorching.

3Stir in soy sauce and oil.

4Season with salt and pepper to taste.
