- 1 Tbsp. butter
- 1 (2-inch) piece fresh ginger, peeled and sliced
- 1 lb. peeled and sliced carrots
- 3/4 c. water
- 1 Tbsp. sugar
- 1/8 tsp. salt
- 1 Tbsp. chopped parsley (optional)
Directions

1Heat butter in a large skillet.

2Add ginger and saute, stirring 1 minute.

3Add carrots and water.

4Cover and cook over low heat until just tender, about 15 minutes.

5Add sugar and salt.

6Cook, turning carrots with a spatula until liquid has almost disappeared and carrots are glazed.

7Serve sprinkled with parsley if desired.
