Gingered Summer Fruit Compote

Ingredients
- 1 Tbsp. sugar
- 2 tsp. cornstarch
- 1/2 tsp. ground ginger
- 1 c. pineapple juice
- 1 1/2 c. fresh pineapple chunks
- 1 1/2 c. hulled fresh strawberries
- 1 c. fresh sliced peaches
- 1 c. fresh blueberries
- fresh mint sprigs for garnish
Directions

1Combine first 3 ingredients and add pineapple juice gradually. Mix well until smooth.

2Bring to a boil and boil for 1 minute, stirring constantly.

3Cool.

4Combine all fruit and toss with mixture gently until fruit is coated.

5Refrigerate for up to 8 hours in covered container.

6Spoon into serving dishes and garnish with fresh mint.
