Gingered Summer Fruit Compote

  • 1 Tbsp. sugar
  • 2 tsp. cornstarch
  • 1/2 tsp. ground ginger
  • 1 c. pineapple juice
  • 1 1/2 c. fresh pineapple chunks
  • 1 1/2 c. hulled fresh strawberries
  • 1 c. fresh sliced peaches
  • 1 c. fresh blueberries
  • fresh mint sprigs for garnish

Directions

    Combine first 3 ingredients and add pineapple juice gradually. Mix well until smooth.

    Bring to a boil and boil for 1 minute, stirring constantly.

    Cool.

    Combine all fruit and toss with mixture gently until fruit is coated.

    Refrigerate for up to 8 hours in covered container.

    Spoon into serving dishes and garnish with fresh mint.
