Ingredients
- 2 squirrels, cut in pieces (including heads)
- 1 stick butter
- 1 c. chopped onions
- 2 cloves garlic, crushed
- 1 Tbsp. Worcestershire sauce
- 1/2 c. water
- 1 Tbsp. green onion tops, chopped
- 1 Tbsp. flour
- 1 Tbsp. black pepper
- 1 Tbsp. red pepper
- 1 Tbsp. white pepper
- 1 Tbsp. sea salt
Directions

1Cut each squirrel into eight pieces, including heads.

2Combine peppers and sea salt together.

3Season both sides of cut up squirrel with mixture.

4Melt butter in 12-inch cast-iron skillet and fry squirrel until browned all over and they start to stick to the pot.

5Remove the squirrel; add 1 cup onion and crushed garlic. When vegetables are soft add 1/2 cup water, 1 tablespoon Worcestershire sauce and squirrel.

6Cover; let simmer until tender, about 1 hour or 2.

7Add flour and green onion tops; cook 5 minutes, stirring until slightly thickened.

8Serve with rice.
