- 1 12 lbs carrots
- 1 tablespoon olive oil
- 34 teaspoon dried basil or 34 teaspoon dried oregano, crushed
- 1 teaspoon brown sugar
- 12 small garlic clove, mined
- 12 cup water
- fresh ground pepper
Directions

1Scrub the carrots and cut on bias into slices 1/2 inch thick.

2Heat oil in frying pan.

3Add carrots, cover and cook over medium heat for 10 minutes, stirring occasionally.

4Add basil or oregano, sugar, garlic, water and pepper.

5Cook uncovered, about 20 minutes until carrots are tender and liquid is reduced to a thin syrup.
