Glazed Raised Doughnuts

Ingredients
- 1 1/2 c. scalded milk
- 2 cakes yeast or 2 pkg. yeast (dissolved in 1/2 c. warm water)
- 1/2 c. sugar
- 1/3 c. butter
- 2 eggs, beaten
- 1 tsp. salt
- 1 c. mashed potatoes
- 4 to 5 c. flour (more flour, if using active yeast in water)
Directions

1Mash potatoes and put in large mixing bowl.

2Add butter, sugar and scalded milk.

3When lukewarm, add eggs and yeast.

4Add salt and flour.

5Place in greased bowl and let rise.

6Punch down and let rise again.

7Roll out to about 1/2-inch thick.

8Cut doughnuts and let rise until about double in size.

9Fry in deep fat at 375°.
