Ingredients

  • 1 (3 oz.) pkg. lemon flavored gelatin
  • 1 3/4 c. hot water
  • 1 c. crushed pineapple
  • 12 large marshmallows (cut up)
  • 1 c. cooked rice
  • 12 or more maraschino cherries
  • 2 c. whipped cream (1/2 pint whipped cream) or cool whip

    Dissolve gelatin in hot water.

    Refrigerate until thickened. Combine pineapple, marshmallows and rice.

    Cut cherries in small pieces.

    Whip cream.

    Chill other ingredients while gelatin is chilling.

    When gelatin is partially set, add pineapple mixture and part of cherries.

    Fold in whipped cream and place in a 9 x 9 x 2-inch pan.

    Sprinkle with remaining cherry bits.

    Refrigerate at least 1 hour before serving.
