- 1 egg
- 3/4 c. sugar
- 1 c. chopped apples
- 1/2 c. chopped pecans
- 2 Tbsp. flour
- 2 tsp. baking powder
- 1 tsp. vanilla extract
Directions

1Beat egg in mixer bowl until foamy.

2Add sugar; beat well. Add apples, pecans, flour, baking powder and vanilla; mix well. Pour into greased and floured 4 x 8-inch loaf pan.

3Bake at 300° for 35 minutes.

4Remove to wire rack to cool.

5Serve warm with whipped cream.

6Cake will rise to top of pan and fall, leaving a crusty top.
