"Gobbler" Quesadillas

Ingredients

  • 8 Burrito sized tortillas
  • 1 Box of Stove top stuffing (prepared according to box directions but use only 3/4 of the prepared stuffing)
  • 1 1/2 lb turkey lunchmeat cut thick and diced( I prefer a dry low salt turkey like Boars Head)
  • 1 1/2 cup -2 cups shredded cheddar(i prefer less)
  • 1/2 cup jarred turkey gravy
  • 1 whole berry cranberry sauce

Directions

    Combine all ingredients except cranberry sauce.

    Assemble quesadillas using a scant 1 cup serving of filling in each one.

    Spread to within 1 inch of tortilla edge.

    I use a quesadilla maker but if you don't have one pan fry in a sprayed large frying pan and brown on both sides.

    Use a plate to help flip to heat other side.

    Slice into 6 pieces.

    Serve with cranberry sauce if desired.
