  • 1/2 c. soft whole wheat breadcrumbs
  • 1/4 c. plus 2 Tbsp. chopped fresh parsley
  • 1/3 c. finely chopped sweet red pepper
  • 1/4 c. grated Parmesan cheese
  • 1/4 c. butter or margarine, melted
  • 3 Tbsp. finely chopped onion
  • 1 tsp. dry mustard
  • 3/4 tsp. seasoned salt
  • 1/2 tsp. dried whole thyme
  • 1/8 tsp. ground nutmeg
  • 1 lb. fresh crabmeat, drained and flaked
  • 2 egg yolks, beaten
  • 1/2 c. all-purpose flour
  • vegetable oil
  • seafood cocktail sauce
  • commercial tartar sauce (optional)
  • lemon wedges

Directions

    Combine first 10 ingredients in a large bowl; stir well.

    Add crabmeat and egg yolks.

    Stir well.

    Shape mixture into eight 3-inch patties.

    Dredge patties in flour.

    Fry in hot oil (375°) for 2 to 3 minutes or until golden.

    Drain on paper towels.

    Serve with seafood cocktail sauce and if desired, tartar sauce.
