Ingredients
- 2 Tbsp. butter
- 1 to 2 c. flour
- 8 eggs
- 2 c. milk
- salt and pepper
- 8 slices bread
Directions

1In medium saucepan, hard-boil 6 eggs (10 to 15 minutes). Meanwhile, in large saucepan, on medium heat, melt butter.

2Using wire whisk, whisk in enough flour to soak up all of butter (will make small balls).

3Add 2 cups milk, stir constantly.

4Salt and pepper to taste.

5Sauce will thicken.

6Cut eggs in half lengthwise.

7Use a fork to remove yolk.

8Place yolk in a strainer/colander (very small grade).

9Chop egg whites and place in sauce.

10Toast bread and place on plates.

11Pour sauce over toast.

12Using a spoon, push yolks through strainer over top of toast.

13Serve hot.

14Makes 4 servings.
