- 1 lb. mild or hot sausage
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1/2 c. celery, chopped
- 1 c. uncooked long grain rice
- 1 c. grated Cheddar cheese (sharp)
- 2 cans cream of mushroom soup, add 1 can water
- 1 small jar pimientos, chopped and drained
Directions

1Brown crumbled sausage in large skillet; drain.

2Add onion, green pepper and celery.

3Continue cooking until vegetables are transparent.

4Add uncooked rice, soup, cheese and pimientos.

5Mix all well.

6Pour in 3-quart casserole.

7Cover and bake in preheated 325° oven for 1 hour or more until rice is tender.
