- 6 medium potatoes
- 2 c. shredded Cheddar cheese
- 1/4 c. soft butter
- 2 c. sour cream (room temperature)
- 1/3 c. chopped green onions
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. butter
Directions

1Cook potatoes in their skins.

2Cool, peel and shred coarsely. Put cheese and 1/4 cup butter in pan over low heat and stir until cheese melts.

3Take from heat and add the sour cream, onions, salt and pepper.

4Stir.

5Fold the potatoes into the cheese mixture. Spoon the potato-cheese mixture into a 2-quart greased casserole dish.

6Dot with 2 tablespoons butter.

7Bake, uncovered, at 350° for 25 minutes.
