Gourmet Wild Rice

  • 3/4 to 1 c. wild rice
  • 12 oz. Jimmy Dean sausage
  • 3/4 c. green pepper
  • 3/4 c. onion
  • 1/2 c. celery
  • 2 oz. mushrooms
  • 1 small jar pimento (optional)
  • 1 can cream of chicken soup
  • 1/2 can cream of mushroom soup
  • 1 c. American cheese

Directions

    Soak wild rice overnight.

    Brown sausage; drain off fat.

    Mix with rice.

    Add green pepper, onion, chopped celery, sliced mushrooms and pimento.

    Mix in cream of chicken and mushroom soup. Mix well; pour into a 2-quart casserole dish.

    Sprinkle shredded cheese on top.

    Bake at 325° for 1 1/2 to 2 hours, covered.
