Grapefruit Aspic

  • No. 2 can grapefruit or 2 1/2 c. fresh
  • 1/2 tsp. sugar
  • 1/8 salt
  • 1 Tbsp. plain gelatin
  • dressing

Directions

    Combine 2 cups of the grapefruit with sugar and salt.

    Soften gelatin in the remaining 1/2 cup grapefruit juice, then place over hot water to melt.

    Stir melted gelatin thoroughly into grapefruit mixture and turn into a mold rinsed in cold water.

    Place in refrigerator to congeal.

    Unmold onto plate and surround with crisp lettuce cups.
  6. 6
    Serve with lime honey or celery seed or any other sweet dressing.
