Grapefruit Pie

- 4 large red grapefruits
- 1 c. sugar
- 2 Tbsp. cornstarch
- 1/8 tsp. salt
- 1 (3 oz.) pkg. strawberry gelatin
- 1 reduced-fat graham cracker pie crust
- 1 c. lite whipped topping
Directions

1Peel grapefruits.

2Separate sections and remove membranes. Place sections in a strainer over a bowl overnight.

3Add enough water to strain grapefruit juice to total 1 3/4 cups liquid. Combine juice liquid, sugar, cornstarch and salt in a saucepan. Cook and stir until thick and clear.

4Add gelatin and stir until dissolved.

5Gently brush some of gelatin mixture over pie crust. Chill gelatin mixture and crust.

6When gelatin starts to thicken, fold in grapefruit sections.

7Pour into crust and chill until set. Top with whipped topping.

8Makes 8 servings.
