- 1 lb. chopped meat
- 1 lb. can tomatoes
- 1/4 c. bread crumbs
- 1 small eggplant
- 5 Tbsp. olive oil
- 6 to 8 oz. Monterey Jack cheese
- pepper and oregano or basil to taste
- 1 roll crescent rolls
Directions

1Fry chopped meat and drain. Add tomatoes. Saute eggplant in olive oil, then add to meat mixture. Grate cheese. Set aside. Line a 9 x 13-inch pan with crescent rolls. Spread meat mixture on dough. Top with cheese and season to taste.

2Bake at 375° for 25 minutes or until crust is golden.
