  • 1 lb. chopped meat
  • 1 lb. can tomatoes
  • 1/4 c. bread crumbs
  • 1 small eggplant
  • 5 Tbsp. olive oil
  • 6 to 8 oz. Monterey Jack cheese
  • pepper and oregano or basil to taste
  • 1 roll crescent rolls

Directions

    Fry chopped meat and drain. Add tomatoes. Saute eggplant in olive oil, then add to meat mixture. Grate cheese. Set aside. Line a 9 x 13-inch pan with crescent rolls. Spread meat mixture on dough. Top with cheese and season to taste.

    Bake at 375° for 25 minutes or until crust is golden.
