Ingredients

  • 1 head romaine lettuce
  • 1/2 cucumber, chopped and peeled
  • 1/2 pkg. basket cheese, cut in small pieces
  • 2 Tbsp. minced fresh mint or 1 1/2 tsp. mint flakes
  • 1 (8 oz.) pkg. crumbled Feta cheese, rinse with water and drain
  • sliced black olives
  • 1 tomato, chopped
  • 2 Tbsp. extra light olive oil
  • 1 Tbsp. lemon juice, fresh
  • 1 small clove garlic, minced
  • 1/8 tsp. black pepper

Directions

    Wash romaine lettuce, pat dry with paper towels and tear into bite size pieces.

    Place in a large bowl with cucumber, mint, cheeses, olives and tomato.

    In small bowl, mix olive oil, lemon juice, garlic and pepper; whisk together until well blended.

    Pour dressing over salad, toss well and serve.
