  • 6 to 8 leg quarters
  • 6 to 8 potatoes
  • 2 c. lemon juice
  • 1 tsp. garlic powder
  • 1 tsp. oregano
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Directions

    Mix lemon juice and spices together and set aside.

    Cut potatoes in small pieces and place on one side of 9 x 13-inch pan. Dip leg quarters in lemon juice mixture.

    Place chicken on the other side of pan.

    Pour remaining mixture over potatoes and chicken.

    Cover with foil and bake 45 minutes at 350°.

    Remove foil and bake an additional 10 minutes.
