Green Bean Salad

Ingredients

  • 3 cups green beans, ends trimmed
  • 1 12 ounces sliced black olives
  • 18 cup balsamic vinegar
  • 1 scallion, chopped
  • 2 tablespoons capers
  • 18 cup grated parmesan cheese
  • 18 sun-dried tomato, rehydrated
  • 1 dash sea salt
  • 1 dash fresh ground pepper

Directions

    Steam beans in large pot of boiling water - 4 - 5 minutes or still crunchy but cooked.

    Run under cold water to prevent overcooking.

    Rehydrate and drain sundried tomatoes.

    In a salad bowl, combine balsamic vinegar, salt and pepper.

    Add green beans, scallions, olives, capers and sundried tomatoes.

    Mix well.

    Sprinkle with parmesan cheese.

    Serve cold or at room temperature.
