- 3 cups green beans, ends trimmed
- 1 12 ounces sliced black olives
- 18 cup balsamic vinegar
- 1 scallion, chopped
- 2 tablespoons capers
- 18 cup grated parmesan cheese
- 18 sun-dried tomato, rehydrated
- 1 dash sea salt
- 1 dash fresh ground pepper
Directions

1Steam beans in large pot of boiling water - 4 - 5 minutes or still crunchy but cooked.

2Run under cold water to prevent overcooking.

3Rehydrate and drain sundried tomatoes.

4In a salad bowl, combine balsamic vinegar, salt and pepper.

5Add green beans, scallions, olives, capers and sundried tomatoes.

6Mix well.

7Sprinkle with parmesan cheese.

8Serve cold or at room temperature.
