  • 5 lb. diced green chilies
  • 1 c. chopped onion
  • 1/2 c. chicken base
  • 3 Tbsp. chopped garlic
  • 4 chicken filets, diced
  • 3 gal. chicken stock
  • 1 bunch cilantro, chopped
  • 6 oz. cornstarch
  • 3 Tbsp. olive oil
  • 1 oz. cumin
  • 1/2 oz. oregano

    Simmer chicken filets in stock until done.

    Remove and dice. Saute

    garlic in olive oil; add chicken and green chilies

    Add cilantro to saute mix.

    Add saute mix and remaining ingredients to stock. Simmer to desired consistency and flavor.
